I am using Outlook 365 as my mail client on my 2019 iMac (running Mojave for the moment). FYI I used to use Apple Mail but was dissatisfied with the way it let so much junk mail in on the Mac. And I used Outlook in my former professional position and got used to its features at the time (though that was the Windows version, which is a bit better than Outlook for Mac). However, I have kept the old Apple Mail app and indeed, I used Apple Mail on my iPhone 12.

In principle the Outlook mail data file is on the server and not stored locally, but I have never backed it up except via Time Machine. I've seen some mentions here of applications for backing up email on Mac.The first one that came up on a Google search was Mail Backup X. I usually skip the first Google entries but I took a look at it and it seems very powerful and isn't all that expensive as far as I can tell.

Does anyone here have experience using Mail Backup X?

A couple of things, the SPAM filtering is predominantly done on the server side. On the client side you can do filtering based on rules, but that's not as robust. So if you are using an email provider that doesn't have robust spam filtering, ANY email client will let spam through.

Second, if you are using IMAP as your way of communicating with the email server, all the emails are indeed saved on the sever and if you want to back up everything locally as well, Time Machine is technically backing it up. But if you wanted to do it on your own for extra measure, you'd have go to the /Users/<username>/Library/Group Containers/UBF8T346G9.Office/Outlook/Outlook 15 Profiles/Main Profile folder and back everything up there.

I went to that Outlook 15 Profiles Main Profiles folder and couldn't figure out what I needed to back up - the whole folder ? Probably take a week! May not be tremendously worth it, unless I should want to read those messages in another format (i.e., not in .olm) and could convert the file. Not sure that is possible.

And yes, I hear you about spam. It was actually my previous email provider that was not doing anything to filter spam, and some of it came through more on Apple Mail than it did on Outlook. But I have now changed to a different provider and it's like night and day, so that is no longer a big deal. Most of the junk mail doesn't get through to Outlook, if it does Outlook usually pins it down and plops it into the junk mail folder.
