Changes in Mail.app with Ben Sur

I suddenly have 6 'segments'. I didn't do/change anything after updating to Big Sur.

1) Favourites
All Inboxes, All Drafts, All Sent, Flagged. No control over these. Everything is in there.

2) Smart Mailboxes
No control over these. Everything above is also in here.

3) On My Mac
3 Drafts mailboxes, 3 Sent mailboxes, 3 Bins (which will not empty, no matter how often I empty them: messages just bounce back in here: no control), then one of each mailboxes I designated myself, except Recovered Messages which is full of trashed messages, right now about 320)

4) iCloud
With 11 mailboxes and 5 submail boxes in Mailbox
Repetition of my @mac emails in the Favorites segment. Also here the Bin won't empty

5) Business GMail
with Inbox, Drafts, Spam and Trash (not called Bin here). Also here repetition of some in the Favorites segment. Here the Trash does empty after two tries

6) Private GMail
With 7 mailboxes and 5 submail boxes in Mailbox, so different from the Business GMail segment. Also Trash here which empties after two tries

Now I have bloated Bins full of messages.

Another issue: I have 1 flagged message in the flagged folder, but the flagged folder is empty.
If I put e.g. flag 3 messages, there are 3 messages in the folder but the counter stands at 4.
Where is that invisible flagged message?

Oh, and I forgot to mention: only my Business GMail has a spam folder. The other two don't.

Anybody with the same mess, or am I the only one?

Anybody with suggestions if and how I can put some order back? Or just wait for Apple to wake up?

I can't address everything, but for the smart mailboxes if you right click on them you get a menu and one of the options is "Delete." Easy.

The folders in the individual Gmail are associated with the account. They duplicate in favorites if you open them a lot to make them a favorite. That's how Favorites works. You can add an account or folder to Favorites, but I don't think you can remove one. If you don't want to see them, collapse Favorites to one line. In fact, at each of the "segments" as you called them, there is an option to open or close the details. Adjust to suit what you want.

Spam (and other) folders only appear when there is something in them, like Drafts. No Spam, no folder.

Trash works for me. I right click on the trash icon, select "Erase Deleted Items," get a warning that it's not reversible and when I confirm, it's done. If that isn't happening for you there is something wrong with your Mail settings or you have installed some "add on" that is making it not operate as designed.

Apple isn't going to change for you. They won't "wake up." What you have is the new Apple Mail. If you don't like it, don't use it. It's free so it's entirely your choice. There are alternatives.

Txs for your elaborate reply.
I don't understand why the design and use of Mail.app had to be changed. As it was it was close to perfect. Now it's just messy.
"If it ain't broke, don't fix it."
It's not only overdone with an overload of boxes listed in the left column, also the "Move to...." pulldown menu is two screens long.
But OK, everybody his/own opinion.

Yep, and I don't understand why Ford decided to change the design of the 1967 Mustang, either. It was perfect. But things change and we adapt. Or not.
