And a very Merry Xmas to you all.
If anyone knows please... prior to High Sierra, there was an option via the drop down menu on Mac Mail to select the image size. Small, medium, large. That option seems to no longer be offered as far as I can see. Is it somewhere I missed? Instead of being able to do that with images that I quickly want to attach or post into my mail, I now have to take the image and resize it in another programme (Photoshop in most cases) and then paste it back in? Why would they take away this very useful feature? Have as Merry an Xmas as possible and hoping to a better 2021.

It's there in Mail in Big Sur, and I'm pretty sure it's been there all along. When I click on the paperclip icon to add an image, an option appears on the right side just below the "From" line for "Image Size" with all of the options you mentioned. It also appears when I drag and drop an image into a new email message.

With Mail 12.4 in Mojave, that appears after attaching an image.

You are absolutely correct. First of all mea culpa re the name. I have a rough time with the iterations of the operating systems. Indeed it is Big Sur I should have said, and it's odd... when I tried it earlier on in replying to an email I received and "pasting" a picture on it, I did not get that option. Trying it now again - I am! Thank you for responding, and wishing you a Merry Christmas.

Thank you. I got it sorted out, and it was playing hide and seek with me for a while. :)
