I uninstalled Sophos a couple of years ago. I just noticed 'com.sophos.endpoint.scanextension' using a lot of memory. I went on line to see how to remove it and was taken back by processes not meant for a non-techie. Question. Is there an 'easy' way to remove this extension, and...thinking of getting a new Mac and using Time Machine to move all of my files and such to my new computer. Will the Sophos extension also be moved to my new computer as well?
Thank you in advance.

Here is how I would find and remove it.

I'd download:

EasyFind (free)
DEVONtechnologies | Needful Things

I'd set EasyFind to only look for the names of files (not contents of files). To look for all files and folders, to ignore case, and to look for invisible files and folders.

I'd then search for "com.sophos.endpoint.scanextension".
Once found, I'd click on the Delete icon in the EasyFind toolbar.

I'd also do a search for "sophos" and delete any other files having to do with Sophos.

If you don't delete it from your most recent backup, then, yes.

Did you uninstall Sophos following these instructions or did you just drag Sophos to the trash bin? Application like this need to be removed with their own uninstallers since they install a lot of stuff in various places that run in the background.

What you are seeing in Activity Monitor is the name of the application, you're likely not going to find a file with that name on the system, it might be called something else.

As with a few complex applications like Sophos the usual advice is to reinstall the app first, somewhat like Ashwin suggests above.
Here are the instructions from the Sophos Community; HOW TO: Remove System Extensions - Recommended Reads - Big Sur EAP (Read-Only) - Sophos Community
Note that the first step in method 1. is to reinstall Sophos.
It is a bit technical but seems to be a well explained step by step process and if the Sophos Community don't know how to do it then I'm not sure who would.

I also found this from the same source. The instructions are for Terminal but you could use EasyFind to locate and trash the same files listed here as suggested by Randy B. Singer.
